Project: Steamed Custard Buns


So our breakfast table a week ago that usually is oatmeal and muesli, had a new companion: a fresh basket homemade steamed custard buns (lai wong bao)! These custard buns are one of my favourite dim sum and if you want your friend to like dim sum, let them try a sweet creamy steamed custard buns first. It’s a winner c:

I’m quiet happy my steamed goodies, and I hope you guys try them out as well!

Btw, these pictures below are all unretouched apart being cropped in sizes! I was feeling lazy... so yeah.


Dus laatst was het smullen geblazen bij ons met name het ontbijt. Normaal gesproken eet ik brinta met muesli en/of yogurt maar dit keer hadden we ook nog gestoomde buns met custard (lai wong bao)! Deze buns (bapao buns) zijn super lekker en lekker zoet, iets wat ik aan iedereen kan aanraden die nieuw is voor Chinees eten/dim sum c:

Ik ben best we tevreden met mijn gestoomde baksels. Ik hoop dat jullie ze uitproberen!  

De foto’s hieronder zijn trouwens niet gephotoshopt behalve op maat geknipt. Ik was een beetje lui... 

Da recipe: 
 steamed buns: 300 gr plain flour (or bapao flour), 4 tbsp. sugar, ½ tbsp. yeast + 2 tbsp. water½ tsp. baking powder, pinch of salt, 140 ml water (room temp.), 1 tbsp. vegetable oil
 custard filling: 35 gr custard powder, 2 tbsp. cornflour, 120 ml coconut milk, 2 tbsp. condensed milk, 1 tbsp. sugar, 2 egg yolks
I was also lazy in cutting my own baking paper so I used these paper cups instead. 

Da Steps:
  1. For the buns, follow my recipe at the steamed coconut buns here
  2. To make the custard filling: combine custard powder and cornflour and sugar in a sauce pan. Add the coconut milk and condensed milk and combine over low-medium heat. Keep stirring!
  3. Once the filling is well combined and thicken up, remove from heat. Add in the egg yolks and combine well.  
  4. Let the filling cool off and set aside. 

    back to the buns... 
  5. Once the buns has raised, release the gas by giving it a gently punch to it. Divide the dough in balls (10-12) and flatten them. 
  6. Fill the flatten dough with 1 generous tablespoon of the custard filling. Once all the dough are filled with the custard, let it rest for 15 mins in the baking paper/paper cups.
  7. Meanwhile, get your steam basket with a pan of boiled water ready. 
  8. Steam the buns for 8 - 10 minutes. 
  9. Serve.

  16. you know.... as much as i love dim sum and pretty much all chinese food, especially anything steamed bun style, i don't think i've ever tried a steamed custard bun!! ridiculous. i am definitely trying this recipe! x

  20. oh my gosh. delicious! i want to try out the buns and maybe stuff it with a meat/veggie filling. in korea we call them wang mandu - i guess that literally translates into king dumplings (but king meaning that they are big so big dumplings?) heehee.
