Project: Eggplant Hawaii Pizza

The Recipe
1 eggplant (6 slices)
Olive oil
1 can tomato puree (70 gram)
2 tbsp. ketchup
2 minced garlic
1-2 slice of cheese (I used Dutch farmer cheese) 

5 cherry tomatoes
1 vegetable soy sausage
1½ pineapple rings
Salt & pepper


What’s your favourite type of pizza? Mine was always the Hawaiian pizza until I became a pescatarian: no more hams for me. Sigh, but the Hawaiian pizza has never left my foodie-heart and so I came with a 100% vegetarian and healthier alternative. I’ve replaced the ham with veggie Dutch smoked sausage and the pizza dough with eggplant. Come to think of it this pizza is also gluten-free.

Please try it out! It’s delicious, quick and easy to make side dish/snack! Perhaps an idea for the upcoming Super Bowl event for the US readers out there. Warning: this is not really an ideal date-food thanks to the amount of garlic inside ha.   


Wat is jouw favoriete soort pizza? De mijne was altijd de Hawaï pizza, totdat ik een pescotariër werd. Geen ham meer voor mij dus. Een diepe zucht, maar de Hawaï pizza is nooit uit mijn hart veloren en zo kwam ik met een 100% vegetarisch en gezonder alternatief. Ik heb de ham vervangen met veggie rookworst en de pizza korst is aubergine. Nu ik erover nadenk, is de pizza ook nog eens glutenvrij.

Probeer dit bijgerecht/snack uit! Het is heerlijk, snel en makkelijk te maken! Waarschuwing: dit is niet echt date-food met je liefje dankzij de hoeveelheid knoflook in de pizza ha.

You can of course use real meat.
Why is the Hawaiian pizza my favorite pizza? Because of the sweet and savory taste in one. The pineapple also gives a nice fresh taste and it's just so good comfort food! Funny fact: this pizza is invented in Canada. 

The Steps
  1. Wash the eggplant and slice it in 6 pieces. Place them on kitchen towel on a baking tray to absorb the moist out of the eggplants (15 min.). Meanwhile pre-heat oven to 160° and chop the cherry tomatoes, pineapple and sausage in parts.
  2. Remove the kitchen towel and drizzle the eggplants with olive oil. Bake for 5 min. on one side, flip, then bake for another 5 min. the other side.

  3. Mix tomato puree + ketchup + garlic together.

  4. 1 tsp. sauce on each eggplant slice, the slices of cheese then the rest of the garnish. End with a nice pinch of salt & pepper.
  5. Bake for around 12 min. or until the cheese has completely melted and the sausage a slight brown edge to it.

  7. Using eggplants in lieu of the pizza dough is so smart! I saw a recipe somewhere else where they substituted the wonton skins with a thinly sliced eggplant, and that would probably be tasty too!

  9. I do quite like Hawaiian pizza, but admittedly, I'm not too into eggplants. You make it look so good though!   12. This looks so good!! And much healthier than regular pizza, too (though I don't think anything can replace regular pizza). Most people don't seem to like pineapple on their pizzas from what I've heard, but it's one of my favorite toppings. Bookmarking this for future reference!
